Grilled pineapple with cinnamon doughnuts

INGREDIENTS

1/3 cup caster sugar
1/3 cup honey
1/3 cup water
1 teaspoon ground ginger
¼ cup cream
1 pineapple, peeled & sliced and cut into wedges
4 cinnamon doughnuts
ice cream, to serve
METHOD

To make the caramel sauce, place the sugar, honey and half of the water into a saucepan.

Bring to the boil over medium heat; reduce heat to low and simmer until syrup darkens and caramelises.

Pour in remaining water and cream and continue simmering until everything has dissolved and sauce is smooth. Whisk in ground ginger and set aside.

Heat a barbecue hotplate or char-grill and cook pineapple until caramelised and golden on both sides.

To serve, place doughnuts into serving bowl, pour over syrup and place 2 or 3 wedges of pineapple over the top and a large scoop of ice cream.
