Breakfast tapas - fried chorizo with chick peas and tomatoes
INGREDIENTS

roasted tomatoes
4 ripe roma tomatoes, halved
½ clove garlic, chopped
salt & pepper
½ teaspoon coriander seeds

400g can chick peas
1 large chorizo sausage
½ onion, finely chopped
pinch smoked paprika
½ cup breadcrumbs, toasted
60g grated parmesan
METHOD

Season the tomatoes with garlic, salt, pepper and coriander seeds and roast for 30 minutes.

Slice the chorizo lengthways and saute in a hot pan with olive oil. Add the chopped onion and the paprika, then roughly chop the tomatoes and add to the pan. Stir in the chick peas and cook for 5 minutes.

Spoon mixture into a small dish and sprinkle with the breadcrumbs and parmesan cheese.
