Warm lamb meatball salad with tzatziki

Warm lamb meatball salad with tzatziki
INGREDIENTS

2 baby cos lettuce, torn
2 roma tomatoes, chopped
100g feta, crumbled
1 lebanese cucumber, peeled, chopped
75g kalamata olives
½ spanish onion, thinly sliced
store bought tzatziki, to serve
extra parsley leaves and lemon wedges, to garnish

lamb meatballs
500g lamb mince
½ cup burghul (cracked wheat)
¼ cup mint jelly
¼ cup chopped parsley
salt and pepper
2 tablespoons olive oil

METHOD

To make lamb meatballs place all ingredients in a food processor and process until well combined. Roll into tablespoonful size balls.

Heat oil in a large frying pan over a medium heat. Add meatballs in batches and cook for 10 minutes or until golden brown and just cooked through. Keep warm and set aside.

Arrange salad ingredients onto a large platter or bowl. Top with meatballs and tzatziki. Garnish with extra parsley leaves and lemon wedges.
