Warm Portuguese pork salad

Warm Portuguese pork salad
INGREDIENTS

600g pork fillets
1 tablespoon salt
6 cloves garlic, crushed
finely grated zest and Juice of 1 orange
1 tablespoon sweet paprika
1 teaspoon ground allspice
2 teaspoons dried oregano
¼ cup olive oil
1 spanish onion, thinly sliced
1 bunch rocket leaves
2 oranges, segmented (reserve juice)
1 bunch radicchio lettuce leaves, torn
¼ cup fresh oregano leaves
METHOD

Toss pork in combined salt, garlic, zest, juice, spices, oregano and 2 tablespoons of the oil. Cook on a preheated barbecue plate for 15 minutes, turning occasionally until just cooked through. Lightly cover and rest for 10 minutes. Slice thinly.

Toss remaining oil with onion, rocket, orange segments, reserved juice and radicchio until well combined. Transfer to a serving platter or bowl and top with sliced pork and oregano leaves.
