Chilli jam hotdogs with summer potato salad
INGREDIENTS
8 kransky sausages
8 bread rolls, split slightly
grated tasty cheese, lettuce, tomatoes and onions, to serve
quick chilli sauce
400g can chopped tomatoes
½ cup sweet chilli sauce
juice of 1 lime
1 tablespoon brown sugar
1 long red chilli, chopped
summer potato salad
1 kg kipfler potatoes
2 rashers bacon, grilled and chopped
½ cup chopped parsley
¼ cup chopped chervil
¼ cup chopped chives
zest and juice of 1 lemon
¼ cup olive oil
salt and pepper, to taste
METHOD
To make quick chilli sauce, place tomatoes, chilli sauce, lime juice, sugar and chilli in a medium saucepan. Bring to boil, simmer for 10 minutes or until thickened slightly. Set aside to cool slightly.
To make summer potato, boil, steam or microwave potatoes until tender, cool slightly and then cut in half lengthways. Toss with remaining ingredients and season with salt and pepper.
Grill or barbecue sausages over a medium heat until browned and warmed through.
To serve, fill bread rolls with cheese, lettuce, tomatoes and onions. Top with sausages and drizzle with chilli sauce. Serve with summer potato salad.
