Vanilla & chai flavoured sugar

Vanilla & chai flavoured sugar
INGREDIENTS

1kg caster sugar
5 vanilla beans, split length ways, halved across the horizontal
4 star anise, dry roasted
10 whole cloves
4 cinnamon sticks
6 cardamom pods
1 teaspoon ground nutmeg
2 x 2 cup capacity screw top jars and ribbon, for decorating

METHOD

In a large clean mixing bowl place sugar and vanilla.

Dry roast all spices in a large thick based frying pan for 3-4 minutes or until fragrant. Cool completely.

Place ½ the star anise, cloves, cinnamon and cardamom in a coffee grinder. Grind, until a well blended fine powder occurs. Add ground spice, nutmeg and whole spice to sugar and vanilla; mix until well combined.

Divide spiced sugar mix into 2 well cleaned and sterile jars, seal tightly.

Let sit for 2 weeks before using or giving as a gift.

This sugar spice mix is added to already brewed tea,add milk as well to enjoy a cup of vanilla flavoured chai tea ! Tas
I did not see Fresh show last week that had the Vanilla Chai Sugar and the Spiced Sugar. They sound wonderful but the recipe does not indicate what they may be used for. I would like to give them as gifts but need to be able to say what they are to be used for. Thanks in anticipation Jill Sartori
