Sweet & spicy sugar crystals
INGREDIENTS

24 star anise
24 cardamom pods
24 allspice
1 x 300g jar sugar crystals, small enough to fit in the opening of a pepper grinder.
4 pepper grinders
METHOD

Place over a medium to high heat in a small fry pan. When hot, add star anise, cardamom pods and allspice; roast in pan, swirling, for 1-2 minutes or until fragrant. Set aside to cool completely.

Place spices when cooled in a mortar and pestle and crack slightly, without grinding up the spices so small that they will fall out of the pepper grinder.

Place in a medium sized bowl with sugar and mix.

Evenly divide the mixture among pepper grinders. Place remaining mixture in an air tight container and use to top up grinders.
