Pimms cooler & gin punch
INGREDIENTS

gin punch
180ml gin
60ml peach liqueur
360ml ruby red grapefruit juice
60ml passionfruit pulp
20ml fresh lime juice
1 x fresh pink grapefruit cut into small wedges with core and seeds removed
120ml prosecco or champagne

120ml pimms
120ml gin
12 cucumber slices
8 orange wedges
1 apple cut into slices
16 mint leaves
240ml home made lemonade
METHOD

Fill the glasses with ice and serve with a pink grapefruit wedge.

To make home made lemonade, simmer on the stove 350 grams white sugar, 250ml water and 500ml lemon juice until sugar has dissolved. Then mix sparkling mineral water to taste.

Add the fruit to a jug and pour gin and Pimms over the fruit, leave to stand in the fridge for 2 hours, when ready to serve, fill the jug with lemonade and stir.

Fill glasses full of ice and pour the drink over the top.
