Nuoc cham
INGREDIENTS

5 tablespoons caster sugar
3 tablespoons water
80ml fish sauce
juice of 3 limes
1 large clove garlic, finely minced
1 long red chilli, chopped
METHOD

Whisk the sugar with the water. Add the fish sauce and lime juice, stir to dissolve the sugar completely.

Add the garlic and chilli and stir to combine. Allow the sauce to rest for 1 hour before serving.

The sauce will keep for up to 2 weeks in the refrigerator if stored in an airtight container.
