Aussie caramelised onion rissoles

Aussie caramelised onion rissoles
INGREDIENTS

1 tablespoon olive oil
25g butter
2 large brown onions, thinly sliced
2 teaspoons brown sugar
1 zucchini, grated
½ cup chopped flat leaf parsley
¼ cup tomato sauce
½ cup breadcrumbs
1kg beef mince
salt and pepper, to taste

METHOD

Heat oil and butter in a large frying pan. Add onions and sugar and cook over a low heat for 10 minutes or until onions are very soft. Place in a large bowl with zucchini, chopped parsley, tomato sauce, breadcrumbs and mince; season with salt and pepper. Using your hands, mix until well combined. Divide mixture into 8 rissole shapes.

Cook on an oiled barbecue or frying pan for 10 minutes, over a medium to high heat for 10 minutes on both sides or until browned all over and just cooked through. Remove and keep warm.

To serve, spread some flat bread with garlic dip, top with rissole, tabouli and feta, wrap to enclose.

I made them last night and they were OK - they held together , although I was very careful as I could see that they could easily fall apart. Next time I make them I think I'll add 1 egg, beaten, maybe this will hold them together.
I made these for dinner last night, ended up at the take-away & the dogs ate the rissoles, which for whatever reason just fell apart to mush once I tried to turn them in the pan, yet I followed the recipie so am at a loss as to why this happened, have to say though the dogs loved it!
