Tuna with white bean & roasted sumac tomato salad
INGREDIENTS

4 small roma tomatoes, halved lengthways
2 tablespoons olive oil
1 teaspoon sumac
salt and pepper
1 bunch asparagus, trimmed, blanched and halved
1 x 400g can white beans, rinsed and drained
4 x 180g tuna steaks

dressing
1 clove garlic, crushed
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon chopped parsley

crusty bread, to serve
METHOD

Preheat oven at 200°C/180°C (fan forced) and line a baking tray with non-stick paper. Place tomatoes, cut side up onto trays and drizzle with half the oil. Season with salt and pepper and sprinkle over sumac. Roast for 20 minutes or until sightly collapsed.

Meanwhile, heat a frying pan or char-grill pan over medium high heat; brush tuna with remaining oil and season with salt and pepper. Cook 2 minutes, turn over and cook a further 1 minute. Remove and rest for 2 minutes; slice thickly.

Toss tomatoes with remaining salad ingredients and tuna. Whisk dressing and season to taste, stir through salad to mix well. Divide amongst four large shallow bowls and serve with crusty bread.

I believe Don Scott Senior was harsh in his judgement. By all means ,while cooking, one should follow certain hygiene regulations.But one should not be overcome by the obsessive fear of what the modern world calls " HYGIENE". It takes all the passion out of the pleasure of cooking. Let' s be cautious,creative& fair. I've tried the dish!!!! It's delicious. Thank you MONA
I AM SORRY TO SAY THAT THE COOK!!! WHO PRESENTED THE TUNA AND WHITE BEAN SALAD YESTERDAY SHOULD BE TAKEN OFF THE AIR. WHY BECAUSE HE BROKE JUST ABOUT EVERY HEALTH REGULATION IN THE BOOK. HE IS DIRTY - NEVER WIPES HIS BOARD AND DRAINS FOOD IN OR ON A TEA TOWEL IN HIS HAND, IS THIS THE NEW WAY OF AUSTRALIA COOKING - I DO NOT THINK SO. YES I DO KNOW WHAT I AM TALKING ABOUT. I AM A RETIRED COOKERY TEACHER AND VERY PROUD OF MY PROFESSION. REGARDS Don Scott Snr.
