Kid's meatball bruschetta

Kid's meatball bruschetta is a great way to get the kids tucking into a healthy and tasty meal.
INGREDIENTS

1 small carrot
1 stick celery
1 red onion
2 cloves garlic
500g beef mince
salt and pepper, to taste
400g can crushed tomatoes
¼ cup torn basil leaves
1 tablespoon olive oil
4 slices italian bread, toasted
grated tasty cheese, to garnish
METHOD

Place carrot, celery, onion and garlic in a food processor or blender. Process until finely chopped. Place into a large bowl with mince and season with salt and pepper; mix well. Roll tablespoons of mixture into balls.

Cook in a large oiled frying pan over a medium heat until browned all over. Add tomatoes and basil and simmer for 10 minutes or until sauce is thick and meatballs are cooked through.

Serve meatballs on toasted bread topped with tomato mixture and grated cheese.
