Panfriend marinated fish

Panfriend marinated fish topped with caramelized onions is an easy and quick way to impress dinner guests.
INGREDIENTS

500g skinless snapper fillets, cut into 1cm thick slices
2 teaspoons coriander seeds, ground
1 teaspoon chilli powder
½ teaspoon ground turmeric
2 teaspoons fresh garlic, minced
60ml vegetable oil
2 brown onions, thinly sliced
1 teaspoon salt
METHOD

Place fish, coriander, chilli, turmeric and garlic in a large bowl and toss well to coat fish evenly. Set aside for 10 minutes.

Heat oil in a large frying pan over a medium low heat. Add onions and salt and cook, uncovered and stirring occasionally until onions are dark golden brown, for 20 to 25 minutes. Using a slotted spoon, remove from pan and set aside.

Reheat remaining oil over a high heat. Working in batches, add fish and cook turning once until cooked and golden for 3-4 minutes. As each batch is ready transfer to a plate.

Top fish with caramelized onions and serve hot.
