Baked semolina pudding with lynwood jam

Baked semolina pudding with lynwood jam is a decadent dessert for all sweet tooths.
INGREDIENTS

150g semolina (fine white)
600ml milk
125g caster sugar
2 teaspoons vanilla essence
4 egg whites
soft butter, for greasing
1 jar of lynwood jam
icing sugar, to dust
double cream, to serve
METHOD

Pre-heat oven at 180°C/160°C fan forced.

In a saucepan bring milk to the boil with 100g of caster sugar and vanilla. Add the semolina and stir well until thick. Continue to stir and cook for
15 minutes until smooth.

Whisk egg whites in a bowl with the remaining caster sugar until soft peaks form. Gently fold into the semolina mix.

Butter a baking dish. Drop small spoonfuls of jam into the mixture, stir once and pour mixture into the baking dish. Bake in oven for 20 minutes.

Serve dusted with icing sugar and double cream.

If you add about half a cup more milk it wouldn't be as thick but depending on the milk you're using anyway - I find any low fat milk works fine because it's quite watery compared to normal full cream milk. Also this recipe doesn't need to have lynwood jam, try using lingonberry jam from Ikea. It works well and isn't too sweet either.
Can I use any other jam?
I used 150g fine semolina for the 600ml of milk but came out all too thick like a ball of glug. I couldnt incoporate to this dense mixture the egg whites. I think the quantity of semolina is too high. Has anyone had a similar problem? Thanks
Lynwood preserves are still available from their online store, but while you are waiting for the postman to bring your little parcel, you could sample the pudding using a good quality jam or conserve of your choice.
You used to be able to buy Lynwood Jam from the Lynwood Cafe at Collector NSW (Southern Tablelands) but it has recently closed . Im pretty sure you can buy it online and in specialty delis.
where do I buy this please???
